Perfect poached eggs

Preparation time: 10 minutes
 

Poached eggs are easy once you know how. Get kids’ brains and bodies pumping with this yummy breakfast.
 

• Cook 1 or 2 eggs per person.
• Fill a saucepan or deep frying pan with about 5cm of water and add a splash of vinegar (helps the egg keep its shape).
• Bring the water to a gentle simmer.
• One at a time, break eggs into a saucer or shallow cup. Then slide the egg into the water.
• As soon as the water starts simmering again, turn off the heat and cover saucepan with lid.
• Stand for about 2 minutes, or until the egg white has set.
• Lift the eggs out of water with a slotted spoon.
• Serve on wholegrain toast with freshly ground black pepper.|

 

Perfect microwave scrambled eggs

Preparation time: 5 minutes
 

Freshly cooked eggs make a tasty kick-start for the day – and they don’t have to take all morning to make! Breakfast gives kids the goodness they need to grow strong and healthy.
 

For one person:

• Beat 2 eggs with 2 tablespoons low-fat milk in a microwave-safe bowl or coffee mug. Beat well so yolks and white are well mixed.
• Cover with plastic wrap (leave a small gap as a steam vent).
• Microwave on MEDIUM-HIGH for 1 minute 30 seconds to 1 minute 45 seconds, stirring several times during cooking.
• Cover and let stand for 30 seconds to 1 minute before serving. Eggs will look slightly moist, but will finish cooking upon standing.
• While eggs are cooking, toast your toast.
• Serve immediately. Enjoy.
