Perfect microwave porridge

Preparation time: 4 minutes
 

Porridge is a filling breakfast that will fuel kids for school and sport. And, under 50-cents per serve, it’s a super-cheap start to the day.
 

• For each person use ½ cup rolled oats and 1¼ cups boiling water.
• Mix rolled oats and water in a bowl (use a large bowl to prevent spilling over when cooking).
• Cook uncovered in the microwave on high power for 1 ½ minutes. Stir.
• Cook for another minute. Repeat if necessary until smooth and creamy.
• Top with ½ cup milk and a teaspoon of brown sugar.

Tip:

• For a change add any combo of your favourite toppings such as sliced banana, sultanas, canned or fresh fruit, chopped dates, or yoghurt.
 

Spaghetti scramble

Preparation time: 20 minutes
 

Eating breakfast gives kids the energy they need to play and learn better. This tasty breakfast combines two family favourites – spaghetti and scrambled eggs.
 

For 2 to 4 people:

• In a bowl, mix together 4 eggs, 2 tablespoons milk, and a little black pepper. Put aside for use later.
• Spray a non-stick pan with a little oil and heat over a medium heat.
• Cook 1 chopped onion and 1 chopped green pepper in the pan until soft.
• Add 1 can spaghetti and cook until warm.
• Add egg mixture to pan. Gently stir occasionally. Be careful not to burn. Keep cooking until egg is firm and cooked through.
• Sprinkle over 2 tablespoons grated cheese.
• Serve with toast triangles.
