Cabbages fell out of favour but they are worth giving another try. They are high in vitamin C and contain lost of health-giving food elements. Most varieties are best eaten raw but can also be cooked very quickly in a not pan or wok. Try olive oil and lemon juice on coleslaw instead of mayonnaise.
Cabbage is extra tasty stir-fried with bacon. Adding extra ingredients, like lentils (which you can buy tinned in the supermarket) turns the humble cabbage into a fast, nutritious main meal.
Stir-fried Cabbage and Bacon
• 150gm lean bacon chopped into short pieces
• 2 tbsp peanut oil
• ½ medium sized cabbage (washed, dried and shredded)
• 3 tbsp pine nuts or shredded almonds
• 1 onion
• 1 ½ cups brown lentils (optional)
• 2 cloves garlic
Heat large pan or wok over medium heat and add the garlic, onion and bacon. Cook stirring until bacon starts to crisp. Increase heat, add oil then quickly toss in cabbage and nuts. Add drained lentils Salt and Pepper to taste. (serve with rice for main meal accompaniment)
